Apple and hazelnut porridge

Breakfast foods have got to be some of my favourite foods. Whether its a quick pitta with scrambled eggs and spinach or a bowl of homemade granola, I love it. I rarely skip it (mainly as I am then a demon for anybody else to be around). 

Since the storm, we have been having some gorgeous weekend days filled with super fun waves. 

We also have been having wet, grey and wild days.  On these weekend mornings, I think its nice to take a bit of time and potter about making a tasty breakfast. The following recipe has definitely been a favourite of mine all winter. Warm and tasty, perfect for when the wind is battering your house.

Ingredients:
1/2 cup of oats
1/2 cup of ground roasted hazelnuts
2cups of water
a pinch of salt
1 apple, grated
a dash of cream

Optional:
golden brown sugar, maple syrup or honey to sweeten
a slice or two from the apple, cut before you grate it

Quantities make two small bowls or one large Sunday brunch bowl


Method:

First you will need to roast and peel your hazelnuts. If you don't know how to do this follow this link to a previous post where I explain how.
Once roasted, grind 1/2 a cup of hazelnuts in your food processor / chopper.




Now put the oats, hazelnuts, water and salt into a small pot and gentle bring to the boil. Once it starts to bubble, turn the heat down and add the apple to the pot.
Allow the porridge to cook to the consistency you like (I tend to like it quite thick) stirring as necessary.
Just when you think it is ready add a dash of cream and stir for another minute (This in my opinion makes it nice and creamy without having it swimming in milk or feeling really heavy).

Once in the bowl add a bit of something sweet it you like. I tend to favour a teaspoon of golden brown sugar but maple syrup is also nice.
